Kelli - I assume you roast squash - but just in case: I like the teeniest yellow squashes I can find, toss them in olive oil and salt, and oven roast at high heat for as long as it takes - 20 minutes? If you go any longer you'll want to turn them so they don't brown too much where they hit the pan (I use pyrex, and lots of oil.) My daughter, who hated squash, loves these.
